Amy Roloff Making Blueberry Pancakes

Good Morning Fluffy Blueberry Pancakes!
Making pancakes always reminds me of my brother. My brother Roger. When he got older, Saturday breakfast or even Sunday breakfast, he was kind of like the king of pancake making. He would always make the family pancakes. So every time I made pancakes for my kids or anybody else, it always reminds me of my brother. He does it for his kids and everything. He was just the king of making pancakes, so I hope I do him well.

But today, Chris requested, and I am going to abide by that request and I’m going to make blueberry pancakes. I guess for a late breakfast, brunch. Let’s call it brunch.

If you guys have any ideas about what you do with blueberries and what you make with blueberries, I would love to know, because I made a blueberry berry, what, gazette? Or whatever you call it. I love it because it’s like a rustic pie and it’s easy, it’s simple, it’s great. Love it. But then there’s blueberry scones. There’s blueberry bread. There’s blueberry pancakes. There’s blueberry muffins, blueberry cake, blueberry tart, blueberry pie.

I’ve even seen it done with… You make this blueberry… It’s not a syrup. Syrup is the wrong word, but you kind of make this blueberry compote or whatever, and you put it over steak. A really good, hearty steak, like a skirt steak or a steak. And then you add a little blue cheese with it, a little tartness to it. I wouldn’t even mind it over arugula, so you have this really nice tart blueberry compote or whatever. Anyway, lots of stuff to do with blueberries. I’d love to hear what your favorite thing is.

Ingredients:
¾ cup Milk
1 ½ Tbsp Lemon juice
1 cup Flour
1 Tbls Sugar
1 Tbsp Baking Powder
½ tsp Baking Soda
½ tsp Salt
1 Egg
2 Tbsp Melted Butter
1 cup Fresh Blueberry
Additional butter for griddle/pan

Directions:
* Mix the milk with the lemon juice and let it rest for a few minutes.
Note: You could just use buttermilk here but I like the hint of lemon juice in the
pancake batter. So I basically made my own buttermilk.
* Whisk the dry ingredients together in a bowl. Whisk the egg, milk and melted butter together in another bowl.
* Stir the wet ingredients into the dry ingredients until just combined. Remember that you don’t want to over mix the batter. The pancakes had a good chance of being more flat instead of fluffy.
* Gently fold in the blueberries.
* Heat your griddle or pan over medium heat. Melt a little butter in the pan (this will give the pancakes that brown crispy outside (don’t over cook, it can happen fast)
* Scoop a little batter into a spoon and then pour the batter onto the griddle. Cook each pancake, for about 1-2 minutes on each side, until you see tiny little bubbles around the edges and on top. Then flip and cook the other side for about another 1-2 minutes til crispy on the outside and tender inside.
Serve with butter and warm maple syrup or another to your liking.
