Many mass-produced breads, including store brands like Great Value, contain a range of questionable ingredients designed to extend shelf life, improve texture, and reduce production costs. Calcium propionate is commonly added to inhibit mold growth, but it has been linked to potential behavioral issues and headaches in sensitive individuals. Emulsifiers like DATEM and mono- and diglycerides help keep the bread soft but can be derived from trans fats, raising concerns about heart health. Azodicarbonamide, a dough conditioner banned in some countries, gained notoriety for also being used in the production of foam plastics like yoga mats. High fructose corn syrup, often used as a sweetener, is associated with metabolic issues and increased risk of obesity. Other additives such as ammonium sulfate (also used in fertilizer) and sodium stearoyl lactylate may not be harmful in small amounts, but their presence raises valid concerns about how far food processing can go to create the illusion of freshness long past a natural expiration point.
