The Mobile Home Built Us a $30 Chicken Tractor
Reuse and Recycle! We used scrap lumber from our mobile home renovation to build a Joel Salatin style chicken tractor! We even reused the screws from the wood!
-- The Lasagna Recipe --
Ricotta Cheese:
Bring 1 gallon of milk to 200 degrees. Stir in 2/3 cup white vinegar or lemon juice and 1 tsp salt. Remove from heat and let sit 10 minutes to form curds and whey. Drain curds through cheese cloth. Add more salt to taste.
Sauce:
Fry 1 lb loose Italian sausage in a large pot. Add 1 diced onion and 3 cloves minced garlic. Stir in 2 (6 oz) cans of tomato paste. Let paste brown slightly, then add 1.5 quarts of water. Stir in 1 tsp basil, 1 tsp oregano, 1 tsp salt, a splash of balsamic vinegar, and 1/4 tsp pepper. Let simmer about an hour, or until reduced about half and thickened.
Assembly:
Boil 1 package of lasagna noodles and cook until al dente. Drain.
Mix ricotta with 1 package of chopped spinach that has been squeezed of excess moisture.
Add 1 cup sauce to bottom of casserole dish. Layer noodles. Layer more sauce, then ricotta mix, then a good sprinkling of mozzarella cheese. Repeat layers until top, ending with a layer of sauce. Sprinkle mozzarella on top. Bake at 350 degrees for about an hour, or until bubbly and mozzarella has brown a bit. Let cool slightly, then serve.
