Perfect Chicken Steam Roast | Juicy & Flavorful Desi Style Recipe!"

🔥 Chicken Steam Roast Recipe (Desi Style)
📝 Ingredients:
For the chicken:

1 whole chicken (or 4–6 leg quarters), skin removed

Juice of 1 lemon

2 tbsp yogurt

1 tbsp ginger-garlic paste

1 tsp red chili powder (adjust to taste)

1/2 tsp turmeric

1 tsp garam masala

1 tsp coriander powder

1/2 tsp cumin powder

Salt to taste

1 tbsp oil or melted butter

Optional: orange/red food color (for restaurant-style look)

👩‍🍳 Instructions:
Prep the chicken:

Clean and pat dry the chicken.

Make deep cuts in the meat to help the marinade penetrate.

Marinate:

Mix all spices, yogurt, lemon juice, and oil.

Rub the mixture all over the chicken and into the cuts.

Cover and marinate for at least 4 hours (overnight is best).

Steam:

Use a steamer or a large pot with a rack. Add water to the base (don’t let it touch the chicken).

Place the marinated chicken on the rack or a perforated tray.

Cover and steam for 25–35 minutes (depending on size) until cooked through.

Roast or Sear:

After steaming, heat a grill pan, tandoor, or oven at 220°C (425°F).

Roast for 8–10 minutes to get a charred or crispy finish.

Alternatively, sear in a pan with a bit of oil for crispy edges.

Garnish and Serve:

Sprinkle chaat masala or lemon juice.

Serve with naan, raita, salad, or chutney.

🔄 Tips:
For smokier flavor, use a coal smoke method after steaming.

Use bone-in chicken for better flavor.

For oven-only version: Bake covered with foil (to mimic steaming), then uncover and broil.
