Fruit Cocktail Pudding 🍒
A blessed day to you! Get ready for a South African dessert that will amaze your family and guests!
Today I’m showing you my large-format Fruit Cocktail Pudding recipe, perfect for Sunday gatherings or the Christmas table. This pudding is not only incredibly juicy and moist, but we also refine it with the famous Ideal Milk Sauce poured over right after baking, as well as my homemade, thick custard that pipes perfectly.

Fruit Cocktail Pudding Recipe
The Batter:
2 cups cake flour
1 tbsp baking powder
1 cup white sugar
a pinch of salt
1 tsp vanilla essence
2 heaped tbsp margarine or butter, softened (½ cup)
3 large eggs, room temperature
1 large can (825 g) fruit cocktail (drain the syrup and keep it aside, also save a bit of the fruit for decoration)
¾ cup milk
The Sauce:
½ – 1 cup fruit cocktail syrup (depending on how moist you want it)
1 can Evaporated Milk (Ideal Milk)
The Custard:
2 cups milk
3 heaped tbsp custard powder
¼ cup white sugar
1 tsp vanilla essence
a pinch of salt
Instructions:
Prep: Preheat your oven to 180°C. Grease your tart dish with non-stick cooking spray.
Mix the Batter: Cream the butter and sugar together. Add the eggs one by one, beating well after each addition. Scrape down the sides of the bowl. Mix in the vanilla essence.
Dry Ingredients: Separately, sift the flour, baking powder, and salt. Add the dry mixture to the wet mixture, gradually pouring in the milk. Beat well and scrape the sides.
Fold in Fruit: Add the fruit cocktail (keeping some aside for decoration). Fold it in gently with a spatula.
Bake: Spoon the batter into your tart dish. Bake for 45 – 50 minutes or until golden brown and cooked through.
Soak: Poke several holes into the hot pudding and pour the sauce evenly over the top. Let it cool completely before adding the custard.
Make the Sauce: Mix the evaporated milk and the reserved syrup. You can warm it slightly (do not boil) or pour it cold over the hot pudding. It will soak in to form a delicious sauce.
Make the Custard: Combine the milk, sugar, custard powder, salt, and vanilla in a saucepan. Whisk well with a wire whisk. Place on the stove (medium-low heat, around setting 4, to avoid burning). Whisk constantly until it boils.
Chill & Decorate: Remove from heat, transfer to a small bowl, and cover the surface directly with cling wrap (to prevent a skin from forming). Refrigerate until ice cold.
Finish: Spread the cold custard over the cooled pudding or pipe it on for a fancy look. Decorate with the remaining fruit cocktail and red cherries if you like. Enjoy!
