UBE CAKE with Pastry Cream Filling Recipe
Ube cake is made of chiffon cake with ube jam or ube halaya. Ube is a root crop in the Philippines with it's lovely purple in color, others in white variety.

This UBE CAKE recipe mostly filled with ube jam, topped with macapuno or cheese. But today, we gave into the next level of filling...the "PASTRY CREAM". Pastry cream is made of egg yolks, milk, vanilla & some portion of butter. This UBE CAKE is surely you'll get in-love and add to your list of desserts.

INGREDIENTS: (Cake)
2 cups all purpose flour
6 large eggs + 1 egg (we need only egg white)
3/4 cup cooking oil
3/4 cup evaporated milk
1/2 cup sugar (for egg yolk mixture)
1/2 cup sugar (for meringue)
1/2 cup ube jam or ube halaya
3 tablespoon ube powder
1 tablespoon ube flavour
1 1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
3/4 teaspoon cream of tartar

FROSTING:
200 grams softened butter
3/4 cup condensed milk
1 teaspoon salt

PASTRY CREAM:
2 cups whole milk (not advisable to use low fat milk)
6 large egg yolk
3/4 cup sugar
2 tablespoon vanilla
1/4 cup cornstarch or cornflour
1 tablespoon unsalted butter
