Mini egg cookies

Ingredients:
• 125g butter
• 100g sugar
• 120g soft brown sugar
• 1 tsp vanilla
• 1 egg
• 280g self-raising flour
• 1 tsp bicarbonate of soda
• 120g mini egg bar, chopped into chunks
• 200g mini eggs, lightly crushed

Mix everything together to form a cookie dough, then roll into balls.
2. Put the dough balls on a plate, cover, and chill in the fridge for at least an hour.
3. Bake at 170°C for around 10 minutes.
4. Once they’re out, press extra chocolate or mini eggs on top if you want them to look nicer.
