KARELA PULUSU - Mrs Vahchef
Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women
DESCRIPTION:
Kakarakaya pulusu / bittergourd curry prepared with tamarind and spices. Karela ki Sabzi is a diabetic recipe that goes with rice, rotis.
INGREDIENTS:
Bitter gourd 2 nos
Salt To taste
Turmeric powder ½ tsp
Mustard seeds ¼ tsp
Fenugreek seeds 6-8 nos
Onion(chopped) ½ cup
Ginger garlic paste 1 tsp
Curry leaves 1 spring
Turmeric powder ½ tsp
Red chilly powder 1 tsp
Coriander powder ½ tsp
Desiccated coconut powder 1 tbs
Tamarind juice 1 cup
Sugar ½ tsp
Roasted sesame seeds powder ½ tbs
METHOD:
1. Peel bitter gourd slightly and cut into lengths of 1 ½ inch.
2. Take a bowl and add bitter gourd pieces, little salt, turmeric powder and mix, keep aside.
3. Heat oil in a pan and add mustard seeds, fenugreek seeds, onion and saute it.
4. To it add ginger garlic paste, curry leaves, turmeric powder and saute it.
5. Now squeeze water from bitter gourd.
6. To the above mixture pan add bitter gourd, shallots, red chilly powder, coriander powder, salt and mix it later cook with lid on it.
7. Add desiccated coconut powder, tamarind juice and cook it for 5 mins with lid on it.
8. Atlast add little sugar, roasted sesame seeds powder and mix it, later cook for 1 min.
9. Now karela pulusu is ready to serve with rice or roti.
