How to Make Consommé
Consommé is a type of clear soup made from richly flavored stock, or bouillon that has been clarified, a process that uses egg whites to remove fat and sediment.
Ingredients:
Ingredients should be cold
2 oz. diced onion
1 oz. diced celery
1 oz. diced carrots
1/2 tsp cracked black pepper
2 oz. egg whites
salt
1 small bay leaf
1 clove
1 stem parsley (chopped)
2 oz. diced tomato
4 oz. lean protein
1 1/4 quarts stock
Medium stock pot:
Add protein
Add tomatoes (mix together to separate the protein from clumps)
Add good pinch of salt
Add onions
Add celery
Add carrots
Add pepper
Add small bay leaf
Add clove
Add parsley
-mix together
Add egg whites
-mix together
Add 1.25 quarts of stock
Start on high heat
Stir gently until egg whites begin to solidifying
Eggs will create a ‘raft’
Gently create a ‘vent’ or two in the egg raft
Reduce heat to simmer for 30 minutes
Remove from heat without disturbing the egg raft
Use a cheesecloth or large coffee filter and ladle consume into the filter to strain
Use dry paper towel to remove any floating fat
