Fried Chicken Recipe (Buttermilk)
Ingredients:
3 1/2 pound chicken, cut in 8 pieces
2 tsp salt
1 tsp black pepper
2 tsp smoked paprika
1 tsp celery seed
1 tsp cayenne
1 tsp white pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp ground dried poultry herbs (oregano, thyme, rosemary, sage)
2 cups buttermilk
for the seasoned flour:
2 cups flour
1 tsp salt
1/2 tsp paprika
1/4 tsp cayenne
1/2 tsp white pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 1/2 quarts peanut or canola oil for frying
Place dried chicken parts into a bowl. Cover chicken with theherbs listed in the ingredients section (salt, black pepper, smoked paprika, celery seed, cayenne, white pepper, garlic powder, onion powder and ground dried poultry herbs)
Massage into the chicken until thoroughly coated. Add buttermilk, mix well, cover and let sit in the fridge for a minimum of 4 hours.
Season the flour with the salt, paprika, cayenne, white pepper, garlic powder and onion powder.
After the chicken has marinated in the buttermilk mixture place the pieces in a colander to drain.
Dredge the chicken parts in the flour mixture and place on a sheet pan (cookie sheet). Bring peanut or canola oil to about 375°F. Carefully place dredged chicken into the hot oil and cook until the internal temperature is 165°F
