Chicken Harvest - Gentle and Careful (Warning: we show the process)

We share our process here for how we harvest (kill) our chickens when needed for our food. The process is very simple and straight forward and seems to facilitate a fast and clean passing for them. After learning many ways to go about killing a chicken, we find this to be the most gentle and connected way to do it and it feels as though the chickens are able to pass to the other side fastest and with the least overall stress. It also allows us to remain connected to them during their process.
Many questions have come up specifically around 'bleeding out' or how we deal with the fact that in this method there is no blood loss... What we find is that once the process is done and the bird is completely passed on, we rest them laying on their backs with the heads down, over the edge of something... This position allows the blood in the body to collect in the head area, but without any loss of it. Later, when we process in the kitchen, we can put the head over a bowl and cut the neck to collect 100% of the blood to either cook or share with our animals. The meat comes out clean and in good shape, so this works very well for us.
