绿豆糕做法 How to make Mung Bean Cake ASMR
綠豆糕
食材:
300g 去皮綠豆
100g 無鹽黃油
40g - 80g 蜜糖或砂糖
40g 麥芽糖
做法:
1. 去皮绿豆浸泡半天或一夜,中间换几次水,天太热要放冷藏.
2. 泡好的豆子蒸熟約45分鐘.
3. 綠豆蒸好後,蓋上蓋子,讓它冷卻一會兒在放進攪脆器.
4. 加入绿豆泥、蜜糖或砂糖、麦芽糖不停翻炒,最好用不粘锅.
5. 炒至不粘能成团,比较干(这个干的程度可以自己试一下,实在不行不够干就回锅再炒一会儿,因为太湿在做的时候容易粘模,不好成型)即可用保鲜袋装起来晾凉.
6. 取出绿豆泥,按自己要用的模具大小分成等分搓圆.
**如是用50g模具,却用30g綠豆泥.
7. 取一份绿豆按扁. 从下往上收口, 放入模具中. 按压后脱模即可.
8. 推荐冷藏后食用,口感更佳。冷藏密封保存,2-3天内尽快吃完.
Mung Bean Cake
Ingredients:
300g mung beans
100g unsalted butter
40g to 80g honey or sugar
40g maltose
Methods:
1. Soak the peeled mung beans for half a day or overnight, changing the water several times in the middle, and refrigerate if it is too hot.
2. Steam the soaked beans for about 45 minutes.
3. Let it cool off a little bit before put the mung bean into food processor to grind.
4. Add mung bean puree, honey or sugar, and maltose to stir fry, preferably in a non-stick pan.
5. Stir-fry until it is not sticky and can form a dough, which is relatively dry (you can try this by yourself, if it is not dry enough, return to the pan and stir-fry for a while, because it is too wet and it will stick to the mold when making it, and it is not good to shape).
6. Take out the mung bean paste and divide it into equal parts according to the size of the mold you want to use.
**If you use a 50g mold, use 30g mung bean paste.
7. Take a portion of mung bean and press it flat. Close it from bottom to top and put it into the mold. Press and release the mold.
8. It is recommended to eat after refrigeration for better taste. Refrigerate and keep tightly sealed, and eat as soon as possible within 2-3 days.
