🥞 Light & Lacy Crepes – Just Like in the Countryside

Here’s my go-to crepes recipe, perfect for sunny mornings at the summer house. Soft, thin, and slightly golden – they’re as comforting as a breeze through open windows. 🌿

Ingredients:

2 eggs
6 g salt
14 g sugar or honey
70 ml vegetable oil
300 ml milk
170 g flour
260 ml boiling water

Instructions:

In a large bowl, combine the eggs, salt, sugar (or honey), oil, milk, and flour.
Tip: Use a blender or whisk well to avoid any lumps!

Once smooth, slowly add the boiling water while continuing to mix. This makes the batter extra light and silky.

Your crepe batter is ready! Let it rest in the fridge for 30 minutes for best results—or start cooking right away if you're impatient like me. 😉

Cook on a non-stick pan until golden on both sides. Serve with jam, fresh fruit, or simply folded with powdered sugar.
