Here are a few interesting figures: In 2012 over 800,000 meals, 54,000 kg of vegetables, 2,450,000 baked goods, 300,000 kg of ice cubes and 49,000 bottles of sparkling wine and champagne were delivered.

"Hello! Today I’m visiting the world’s largest provider of integrated in-flight service solutions. It’s all about aircraft trolleys and what goes in there.

To be more precise, I’m visiting the LSG Sky Chefs. LSG stands for Lufthansa Service Gesellschaft. “Sky” tells you where the trolleys all go. And the word “chef” is short for “chef de cuisine,” which comes from French.

A lot of cooking goes on here, which involves handling many fresh ingredients. That’s why I’m wearing this coat. And why I need a hairnet too.

Now I will go find Ms. Winkler. She invited me to come by today and have a look around.

The Lufthansa Service Gesellschaft doesn’t just work for Lufthansa, does it?"

“No. We are a 100% subsidiary of Lufthansa but we provide catering for over 300 airlines.

We have two main customers here in Hanover - Condor and Germanwings, of course also Lufthansa along with many smaller airlines and VIP airplanes.”

“Passengers on Germanwings will get such a bag today containing a roll with cheese or sausage and a nice vegetable pesto. They’re made back there.

Over 70 permanent employees work here. Of course they get help from all kinds of machines. Like this one, which is used for cheese. How does it work?”

“You put in the cheese and set the number of grams you want on this display.”

“Okay, 30 grams”

“Each slice should weigh 30 grams. Now I press start …”

“Oh - they get halved.”

„Yes, halved.”

“30 divided by 2 makes 15.”

“That’s right. 16.”

“16? Well, I guess no passenger will mind that.”

“If it is one gram more? No. But three grams less would drive me mad.”

“Hence the scale. By the way, this is gouda, the most popular Germany cheese. Can’t go wrong with that.”

“This is the second station. Here is where they put toppings on the rolls. I think I’ll help out a little.

You can take a short break if you like. I’ll carry on. I think I can manage.

Boy, that’s quite a pace. Oops. Missed one.

I think I’m drifting farther and farther to the right, closer and closer to my colleague who actually finishes the rolls.

Phew, that really is fast.

I don’t know how many roll halves have passed by these past two minutes but I would say – Hello?! – could you take over again? I’m getting out of breath. Thanks.

The machine seals the packages fully automatically, ready to go for the flight.

Chocolate and water are already inside. Now the roll goes in. The smart bag is ready. Off it goes into the aircraft.

Ms. Winkler, more and more rolls and simple snacks are served on airplanes. Do you still prepare complete meals on trays?”

“Of course. It all depends on which airline it is and what route is being flown. We still provide airline meals on trays which guests can book in advance.

But we also have special meals for passengers with all kinds of allergies. We offer gluten-free, lactose-free, vegetarian, and vegan meals.”

“The building housing the LSG Sky Chefs has about 5000 m² of floor space. 386 m² are used for refrigeration … and 110 m² for deep-freezing.

The building has a really practical design: incoming goods on the one side, and the fully loaded trolleys for the aircraft on the other side.

But it’s all one big circuit. Eventually the used dishes return and have to be washed.

The service also includes paper products like newspapers and toilet paper.

So this batch is all ready to go onto an aircraft.
Where is it headed, Ms. Winkler?”

“First to Paderborn and from there straight to Arrecife.”

“Great. Then I wish the trolleys a good flight. Thanks a lot for letting me take a peek behind the scenes!”
