Japanese Food Recipe Authentic/ Utilize used KOMBU into something delicious/ Vegan

What is Japanese food recipe that are authentic?? To me, it's the recipe I took over from my grandma and mom. My family traditional Japanese food recipe.
I love my grandma's recipe, but there are so many recipes I haven't tried in my cooking life. Today's vegan recipe is one of them. I'm focusing on used kombu which many people normally toss it away. Let's convert used kombu into something delicious!
