Veggie Sausage Roll Recipe:
Serves 10
1 x puff pastry (vegan options @jus_rol do them!)

1 tbsp olive oil
1 red onion peeled and grated
2 garlic cloves peeled no crushed
1 tbsp paprika
1 tbsp oregano
1 tsp cumin
1 tin Black beans rinsed and drained
2 tbsp Worcestershire sauce (Biona do a vegan one!)
1 tbsp soy sauce
80g Walnuts
1.5 tbsp tomato paste

Preheat oven to 200
Onion mix: In a pan add the oil and onion, garlic and cook for 2 minutes.
Add the paprika, oregano, cumin and combine well. Remove from heat.
In a food processor blend the walnuts into a Chunky flour consistency.
Add the black beans, onion mix, tomato paste, Worcestershire, soy sauce and blend into a “textured dough” there will be some bean still visible.
Roll out the pastry sheet, add this mix long lengthways onto the pastry and press into a long rectangle. Fold over the puff pastry and press together sealing it tightly.
Slice into rolls.
Place onto a baking tray facing up (pastry up ) drizzle with a little oil and cook for 30 minutes.
