Snowskin Mooncake recipe.
Who’s excited for Mid-Autumn festival? We definitely are! To celebrate our joy with you, we have prepared a recipe specially for this occasion – Snow skin mooncakes! Mooncakes have always been a must-have during mid-autumn festival to celebrate family unity as well as goddess Chang’e ascending to the moon. This year, try our no-bake snow skin mooncake recipe and who knows, it might be even better than store-bought.
Here’s what you need:
- Glutinous Rice Flour 250g
- Icing sugar 150g
- Shortening 30g
- Ice water 130ml
- Lotus paste 180g
- Food colouring
- Mooncake mould
Method:
1. Mix glutinous rice flour, icing sugar, shortening, and iced water into a mixing bowl and whisk.
2. Continue mixing and mould it by hand until it becomes a dough.
3. Dive the dough equally into 3 parts. Add food colouring.
4. Allow the dough to rest in the refrigerator for at least 30 mins.
5. Once ready, split the dough into 15g each.
6. Divide the lotus paste into balls of 15g each.
7. Wrap the coloured snow skin dough around the paste.
8. Press into the mooncake mould.
