THE PERFECT PATA KARE-KARE (exact ingredients below)
Kare-Kare is a Philippine stew cooked with a thick savory peanut sauce. It is usually a variation of oxtail, ox tripe, pork hocks, calves feet, pig feet, beef, seafood, and vegetables. In this video, I used pork pata/knuckles, which is a perfect for this holiday season. Kare Kare is not complete without a bagoong (shrimp paste). Serve it with freshly cooked white rice.

Ingredients:
5 cloves of garlic
1 medium-size onion
1 kg of pork pata/knuckle
1 & 1/2 tbsp fish sauce
1/2 tsp of ground pepper
4 cups or 1 liter water
3 tsp of annatto oil
1 & 1/2 cup peanut butter
1 & 1/2 tsp glutinous flour
1/4 cup of commercial peanuts
11 pcs of string beans
4 pcs of eggplant
1 bundle of pechay
