Persian Pasta with Crispy Potato Tahdig | The "Macaroni" of Iran (Makaroni) 🍝

In Persian cuisine, we have a unique approach to pasta. In Iran, we call all types of pasta Makaroni, but it’s not just about the pasta itself—it’s about how we cook it! We refer to spaghetti as "simple Makaroni" and shaped pasta, like penne, as "Makaroni Formi." 🍝

Now, if an Italian ever watched us make Persian pasta, they’d probably bang their head against the wall. Here’s why:
🍝 We break the spaghetti before cooking—no long, elegant strands here!
🥛 We drain and throw away the pasta water—no saving that starchy goodness.
🔥 We steam the pasta after mixing it with the sauce—just like we do with rice.

But the real magic of Iranian spaghetti lies in the crispy, golden Tahdig. This crunchy bottom layer, made with potatoes, pasta, or even flatbread, is what makes Persian-style spaghetti truly special. In Iranian recipes, it’s not just about the pasta—it’s about that perfect, crispy bite at the end! 😋✨

🔻Ingredients for spaghetti:
• 2 large onions
• 400g ground meat
• 300g spaghetti
• 2 garlic cloves
• 3 tbsp tomato paste
• 1 potato
• 2 tsp turmeric
• 1/2 tsp cinnamon
• Salt and black pepper to taste
• Oil as needed

🍝 Spaghetti Recipe:
1. First, prepare the sauce. Chop the onions into small cubes and sauté them in oil until golden brown. Add the ground meat, turmeric, cinnamon, salt, and black pepper. Once the meat changes color and is browned, add the tomato paste and sauté for 1 minute. Then, add 1 cup of water and let it cook until the water evaporates.
2. For the spaghetti, fill half of a pot with water and bring it to a boil. Add 1 tablespoon of turmeric and salt, then add the spaghetti. Let it cook for 10 minutes until soft, then drain it to ensure the spaghetti is completely dry.
3. Now, add 3 tablespoons of oil to the bottom of a pot and cover it with sliced potatoes. Then, layer the spaghetti and meat sauce, repeating the layers
4. Finally, cover the pot with a clean cloth and place the lid on. Cook on medium heat for about 10 minutes to allow steam to gather inside, then lower the heat and cook for another 20 minutes until the crust is crispy and the spaghetti is soft and not soggy.
