KOMBUCHA Part2 The Second Fermentation & Flavoring

This video walks through the Second Fermentation as well as flavorings.
Just remember, you'll want to save 1 cup per gallon of the raw kombucha to make your next batch....and remove the SCOBY(s) saving one for your next batch. Then you are ready to begin....
Since I'm making 7.5 gallons, I'm using 30 quart jars. You'll want to fill 1/4/-1/3 cup of juice (without added sugars or unnecessary/unhealthy ingredients) in each jar. Then fill to the top with raw kombucha. This will need to sit and ferment 1-4 days. This is what is known as the Second Fermentation. The more fizzy you want it, the longer I'd leave it. You can leave longer than 4 days but be careful as it can get vinegary tasting.
To stop the Second Fermentation, place your jars in the refrigerator.
I like to use a small strainer to pour a glass to drink. Only because the second fermentation can grow a mini scoby or have scoby floaters. They are good for you, but not very tasty as they tend to be a bit slimy. Plus I like to add crazy things for flavor, such as herbal teas (dried fruit/leaves) so this helps filter that out as well.
