A stroll through Bergamo (I) & Casoncelli bergamaschi
Take a stroll through UNESCO heritage town of Bergamo in Northern Italy, enjoying the view from thee Venetian ramparts, taking in the baroque palaces and secret little lanes and finish of with a drink in the bustling New Town.
Prepare a meal of delicious Casoncelli bergamaschi - a filled pasta with Nell`s Travel Kitchen.
For the pasta dough:
make a soft dough from 400g flour (type 405/00), 4 eggs, a pinch of salt and rest in a cool place
For the filling:
soak 20g raisins in a little water
fry 100g salami meat, 3 tbs chopped parsley, 1 chopped clove of garlic in butter until cooked
chop one pear and drain raisins
blitz 100g pre-cooked beef, pear, raisins, fried meat mixture
add 10g Amaretti buiscuits, 60g grated Grana Padano, 1 whisked egg, 1 pinch of grated nutmeg, pepper, salt and a pinch of ground cinnamon and blitz to a smooth paste
roll out the pasta dough in to long strips
put 1tsp of filling in dots along one side and cover with the other sidee of the dough
press around the filling and us a ravioli stamp/cutter to cut of the Casoncelli
fry fresh sage leaves in butter until crip
Boil a pot of salted water, put the Casoncelli into the water, turn down the heat and simmer for 4 minutes
remove Casoncelli with a slotted spoon and brown in the sage butter
