POKEMON CAFE MIX CAKE - Eevee Cake!

Cake Ingredients

2 (15.25 oz) boxes of white cake mix
2 cups all-purpose flour
2 cups granulated sugar
1 1/2 tsp salt
2 2/3 cups water
1/4 cup melted unsalted butter
1 tbsp vanilla extract
2 cups sour cream (room temp)
6 large eggs (room temp)

Buttercream Ingredients

4 sticks (2 cups) unsalted butter (room temp)
1 tbsp vanilla extract
1/4 cup heavy cream
1/4 tsp salt
5-6 cups powdered sugar

Bake the Cakes

1. Preheat oven to 325° F. Line the pans with parchment paper and spray the sides with non-stick baking spray.

2. Use a hand mixer or stand mixer fitted with the paddle attachment to combine the cake mixes, flour, sugar and salt.

3. Add the remaining ingredients and continue mixing until fully combined. Scrape the sides of the bowl with a spatula as needed.

4. Fill three 8” round cake pans with 3 ½ cups batter each, and fill a 6” half sphere cake pan with 2 cups of batter. Use the remaining batter to fill any other pan you have as this will be used for cake pop filling to make the tail and whipped cream shaped cakes.

5. (Optional) Wrap the 8” cake pans with baking strips to ensure they rise evenly.

6. Bake for 40 - 60 minutes. Start checking on the cakes after about 30 minutes and keep an eye on them until a toothpick inserted in the middle of the cake comes out clean.

7. Remove the cakes from their pans and allow to cool completely on a wire rack.

Make the Buttercream

1. In a stand mixer fitted with a paddle attachment, whip the butter until it is creamy and light in color. Scrape down the sides of the bowl with a spatula.

2. Add the vanilla, heavy cream and salt and mix until fully incorporated.

3. Slowly add the powdered sugar a cup at a time. Scrape down the sides of the bowl as needed.

4. Turn the mixer up to high speed and whip for 2 minutes. Reduce the speed to low to slowly whip out any air bubbles.

*Note: I needed two batches of the buttercream recipe to complete the Eevee cake.
