Double-Layer Lime Cheesecake | Ohyoo Cooking

Biscuit Base
Biscuits···80g
Unsalted Butter···20g
Baked Cheesecake
Cream Cheese···150g
Sugar···35g
Lime Juice···20g
Egg···1
Cornstarch···7g
Whipping Cream···60g
[Baking Time]
Bake at 160℃/320℉ for 35 minutes
Frozen Cheesecake
Cream Cheese···50g
Powdered Sugar···12g
Milk···50g
Gelatin···2g
Whipping Cream···100g
Lime Juice···10g
Lime Zest···1 lime
[How to Make]
①First, crush the biscuits, add in the melted butter and mix evenly, spread it on the bottom of the mold and refrigerate for later use.
②To prepare the baked cheesecake, mix the cream cheese and sugar evenly, add in whipping cream, egg and cornstarch and mix well, then add in lime juice and mix again.
③Pour the batter into the mold and bake. Let it cool completely after taking it out of the oven.
④To make the frozen cheesecake, first soak the gelatin sheets in ice water. Mix cream cheese and powdered sugar evenly, add the soaked gelatin into the milk and heat to dissolve (50℃-60℃/122℉-140℉), then add into the cream cheese, stirring until smooth.
⑤Add in lime zest and lime juice, mix well, then whip the whipping cream and mix until even.
⑥Pour into the mold and smooth it out, then refrigerate for at least four hours or freeze.
⑦Take out the cake, remove from the mold, sprinkle with powdered sugar and lime zest to finish!
