A-Z World Foods: Bacon Crêpes - Estevan and Weyburn Library

This savoury Latvian take on the traditional French Crêpes (pancake) recipe uses sour cream and bacon as a topping. Delicious!

Ingredients
For the crepes:
- 1 cup (120 g) flour
- 1 egg
- 1 cup (240 ml) milk
For the topping:
- 1 lb (500 g) bacon
- 16 oz (450 g) sour cream
- butter for frying

Directions:
-Lay the strips of bacon in a skillet. Turn the heat to medium low and cook until crispy, flipping often. Put the bacon on a paper towel to cool. Save the grease from the pan.
-Combine the eggs, flour, and milk until you have a syrupy batter.
-In a second pan, melt butter over medium heat. Pour a thin layer of batter into the pan until the bottom is entirely covered. When the top of the crepe solidifies, flip it. Let cook until light brown, about 2 minutes.
-Combine the bacon grease with sour cream and spread the mixture over the finished crêpes. Add crumbled bacon and serve hot.
