Chicken Quesadillas on the Beach - Blackstone Griddle Recipe

Quesadillas are delicious, but even better at the beach! Here I took the 22" on vacation with us to Kure Beach and cooked the majority of our meals on it. It's a great unit and really performed well.

Ingredients:

2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon chili powder (go to 2 teaspoons for more chili taste)
1/2 teaspoon coriander
1/2 teaspoon cumin
1/4 teaspoon cayenne (Optional I didn't use this)

Use your favorite chili powder or kick it up more with chipotle powder or even some of the adobo sauce from canned chipotles.

Cheese 2-4 cups - I used Colby jack is what I used

Good tortillas. The Don Pancho tortilla are great.
