Let me tell you, nothing beats the look on my wife’s face when I surprise her with this guilt-free, healthy carrot cake! It’s low-carb, sugar-free, and every bit as tasty as the real thing—without any of the guilt. Perfect for a healthier indulgence!
Ingredients:
- 5 tbsp Butter, softened
- 1/2 cup Erythritol
- 4 large Eggs
- 1 tbsp Baking Powder
- 2 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/4 tsp Ground Nutmeg
- 1/2 cup Walnuts or Pecans, finely chopped
- 1.5 cups Almond Flour
- 1/2 cup Carrot, finely grated
- 1 tsp Vanilla Extract
For the Icing
- 4 oz Cream Cheese, softened
- 1 tbsp Heavy Cream
- 1 tsp Vanilla Extract
- 2 tbsp Butter, softened
- 1/4 cup Powdered Erythritol
Cooking Instructions:
1️⃣ Preheat oven to 350°F (175°C).
2️⃣ In a bowl, beat softened butter and erythritol until it becomes light and fluffy.
3️⃣ Add eggs one at a time, mixing them in until smooth and creamy.
4️⃣ Stir in baking powder, cinnamon, ginger, and nutmeg until well combined.
5️⃣ Fold in the chopped walnuts or pecans and almond flour, followed by the grated carrot and vanilla extract.
6️⃣ Pour batter into a greased baking dish, spreading the top evenly.
7️⃣ Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
For the Icing:
1️⃣ In a separate bowl, mix softened cream cheese, heavy cream, vanilla extract, softened butter, and powdered erythritol until smooth and creamy.
2️⃣ For a richer experience, double the icing recipe and layer it between cake slices or around the edges.
Finishing Touch:
- Once the cake has cooled, spread the icing generously on top.
- Garnish with extra chopped walnuts or pecans, grated carrot, and a sprinkle of ground cinnamon.
