Homemade PICKLED BEETS!!

The beets are ready to harvest so its time to get them in a jar!

RECIPE!

4-5lb beets
3 cups white vinegar
1 1/2 cups sugar
2 Tbs pickling salt
2 Tbs pickling spice
1 cup water

*Cook beets until they are tender
*when tender remove beets into a pan of cold water.
*remove peels and tops. peels should slip easy if cooked enough.
*combine brine ingredients (you can put the pickling spice in a cheese cloth for easy removal) * when boiling let it cook for about 10 minutes
* while cooking pack beets into clean jars, you can put them in whole or sliced
* pour brine over beats leaving 1/2 inch head space
*apply lids and rings and process in boiling water bath canner for 35 minutes
( I preheat my canner and water before adding the beets)
*remove jars and let cool before storing
now enjoy!
