Birthday Chocolate Cheesecake:
Crust:
Crushed chocolate cookies of some kind (or crushed chocolate graham crackers). Mix with 6 Tbsp melted butter. Bake at 325 for 15 minutes in an 8 or 9-inch cheesecake pan.
FILLING:
4 packages (8 ounces each) cream cheese
1 cup sugar
1/3 cup packed brown sugar
1/4 cup plus 1 teaspoon all-purpose flour, divided
2 tablespoons heavy whipping cream
1-1/2 teaspoons vanilla extract
4 eggs
1 1/2 4-oz. bars of unsweetened baking chocolate, melted
1 1/2 cups semi-sweet chocolate chips, melted
Mix filling ingredients, making sure all ingredients are incorporated evenly and smoothly. Make sure you scrape the bottom of the bowl.
Pour filling on top of cooled crust. Wrap bottom of cheesecake pan in tin foil (make sure your foil goes up the sides.) Put in a large oven-safe pan that has 1 inch of water in it. Bake at 325 for 1 hour 15 minutes. You may need a little extra time. It's done when the center of the cheesecake has set and the top has dulled a little.
Topping: cook frozen or fresh raspberries with a little water and some sugar (your choice). You can stir in a little raspberry jelly or jam to help the sauce set (become thicker). Chill the cheesecake overnight.
