Coq au Vin- part 1 of French basics 👩🏻‍🍳
Ingredients:
6 bone in/ skin on chicken thighs
4 oz pancetta (or bacon)
8 oz brown mushrooms
1/2 bottle red wine
1 white onion, diced
1 large carrot, diced
2 stalks celery, diced
4 cloves garlic, smashed
2 cups chicken stock
4 tbsp butter (for sauce)
Several sprigs Fresh Thyme and bay leaf
Salt and black pepper for seasoning
Optional: 2 tbsp flour or corn starch for thickening sauce
Chives or parsley for garnish
Instructions:
-marinate chicken in wine with thyme and garlic for at least 2 hours in the fridge or overnight
-in a dutch-oven, slowly cook (render) pancetta and set aside
-remove chicken from marinade, pat dry with paper towel, season both sides with salt and pepper
-sear in batches in the remaining pancetta fat until golden on both sides
-remove chicken and set aside, add in the onion, carrot, and celery, sautéing and scraping the bits from the bottom of the pan
-add back in the chicken, pancetta, remaining wine from marinade, thyme, bay leaf, and chicken stock until the chicken is mostly submerged
-cover and braise at 300 for an hour
-in the meantime sear the mushrooms in oil or reserved chicken fat
-when the chicken is done braising, strain 2 cups of the braising liquid, reducing with a slurry (cornstarch and water) or roux (butter and flour) to thicken
-add in mushrooms, and season to taste
-serve the reduced sauce over the braised chicken, garnish with fine herbs #recipe #cooking #frenchfood #culinaryschool #food #cooking #steak #chefsteps #grilltime #recipe #smokegrill
