"North Meets South" Our new idea for Tammy's cooking show!
This is our first video shot with our new HD camera!
We came up with this new idea for Tammy's cooking show. A "Yankee" from the north (me), and a "Southern Belle" (Tammy), combining our different cooking styles in the kitchen making some seriously good food! The main focus will be everyday, budget friendly dishes. But today, for the first show, and since it's Valentines Day, we pulled out all the stops and made a delicious filet mignon dinner with chocolate covered strawberries for the dessert. We break it down so that anyone can make this dinner perfect, every time! Enjoy, please comment, we love to hear y'all's input. I know I need to work on my camera handling, but I will get better with practice :)
Here is the ingredients and recipe;
Bacon Wrapped Filet Mignon
Drizzled with White Stilton Cranberry Cheese
Chocolate Dipped Strawberry Dessert
For Two
Ingredients Entre:
2 4-6 oz. USDA PRIME Filet Mignon 1- 1.5” thick
5 strips thin sliced bacon (Store brand is best, you want lots of fat drippin’s)
4 average sized white russet Idaho potatoes
1 package fresh sliced mushrooms (found in vegetable section)
4 oz. White Stilton/Cranberry cheese crumbled
1 package dry brown gravy mix.
1 Stick Unsalted butter
Olive oil (any kind is good here, keeps butter from burning)
Whole Milk (you can sub 2% if you like)
Basic 7-2-1 Meat rub: to make rub, use the following:
7 Tbsp. Kosher salt
2 Tbsp. Fresh ground Black Pepper
1 Tbsp. Granulated Garlic powder (can use reg. garlic powder, use more Tbsp. if you love garlic!)
Mix thoroughly.
Ingredients Dessert:
Fresh Strawberries (Get the ones with the stems attached for presentation)
1 Cup semisweet chocolate chips (You can use Dark or White if you like)
Wash and dice potatoes, place in ¾ filled pot with cold water over high heat and bring to boil. Once boil starts, reduce heat to medium and cook approx. 20 minutes or until fork tender.
While potatoes are heating to boil;
Precook 4 slices bacon in cast iron skillet just enough for fat to start to render, cook last piece to crispy and set aside. Leave drippins in skillet. Keep on low heat.
Wash and thoroughly dry sliced mushrooms, add 2 Tbsp. of the butter to the skillet and bring heat to medium, sauté sliced mushrooms in batches (mushrooms can’t be crowded in the skillet or they won’t brown) for approx. 3 minutes each. Drain drippins from skillet and set aside for later.
Apply 721 rub generously to room temperature filet's, then wrap with lightly cooked bacon, secure with toothpick.
Raise heat on skillet to high, add 3 Tbsp. butter and a few drops of Olive oil, when just starting to smoke, add bacon wrapped filet's and sear 3 minutes each side. Remove skillet from heat, put some of the mushrooms on top of the filet's and place in 425 degree conventional oven (Use 400 degrees if you have a convection oven).
Cook for 10 minutes for medium rare (oven’s vary widely so check with instant read digital thermometer. 140 degrees at thickest part of meat will be medium rare).
Remove from skillet to plate. Tent with foil, let rest for 10 minutes.
Mash potatoes, add remaining butter, salt to taste, add milk to desired thickness/texture. Crumble last crispy slice of bacon into completed mashed potatoes and mix.
Add 1 cup very cold water to saucepan. Add powdered gravy mix and whisk until thoroughly mixed. Bring to boil over medium heat, whisking constantly, as soon as mixture starts to thicken, remove from heat, add mushrooms and drippins, mix together and pour over mashed potatoes.
Just before serving, drizzle crumbled cheese over filet's (You could also do this before placing in oven, either way is good).
Dessert:
Wash and thoroughly dry strawberries.
Melt Chocolate chips in double boiler, or alternatively in bowl in microwave on ½ power for 1 minute increments. Stirring each 30 seconds until thoroughly melted.
Dip strawberries in chocolate, place on plate as will be served and refrigerate for 30 minutes (may want to do this before starting dinner preparations so chocolate will set).
