The best atchara recipe for food business

Atchara is a pickle made from grated green papaya, carrots, ginger, chilies and raisins. This dish is a perfect side dish for many Filipino dish like fried daing na bangus, tapsilog, and grilled dishes.

Yield: 6 Jars (1 1/2 cup/jar)
Ingredients
1st Step
1.1 kg Grated Green Papaya (from 1.5 kg whole)
1 tbsp Rock Salt

2nd Step
For Pickling Solution
2 cups Sukang Paumbong/Sukang Sasa/Native Vinegar
1 1/2 White Sugar
1 tbsp Turmeric/Luyang Dilaw (sliced)
2 tbsp Ginger (strips)
4 Cloves Garlic (sliced)
3 pcs Dried Bay Leaves
2 tsp Whole Black Pepper
1 tbsp to 1.5 tbsp Rock Salt
(if using iodize salt reduce the quantity)

3rd Step
1/2 cup Sliced Carrots w/ Design
1 cup Raisin
2 cups Red Bell Pepper (strips)
1 cup Sliced Red Onion (sliced)
