Traditional Chinese Bamboo Shoot Preservation (drying)

This is an ancient Chinese method of preserving bamboo shots so that they can be eaten all year round. Well, it's Zenglei's mum's recipe anyway, she's pretty ancient. I guess most of the recipes on our channel are what her mum taught her, she's been cooking from a very young age.
Ingredients- Bamboo shoots, salt, water.
Every year her mum sends us kilos and kilos of this stuff all the way from China. We have heaps of it already but we did this just to show you and to not waste the shoots that we picked. The variety that he mum sends are bigger and fatter so they look a little different. She also used to send us some preserved in a thick brine and stuffed into a 2 liter coke bottle but it's hard to send that internationally so we haven't had that for a while.
