Mango Pancakes/Crepes

Mango pancakes are soft crepes with whipped cream and fresh mango wrapped inside. They are easy to make, yet so delicious.

➳Mango Pancakes➳
Ingredients:
◦ 2 eggs
◦ ½ cup + 2 tablespoons of milk
◦ ½ cup of flour
◦ A generous pinch of salt
◦ Yellow food coloring
◦ ¼ tsp of vanilla extract
◦ 1 tbsps of melted unsalted butter
◦ Ripe mangos
◦ ½ cup of heavy whipping cream
◦ 1 tbsp of powdered sugar.

Directions:
1. Crack 2 eggs into a bowl and whisk. Next, add in ½ cup and 2 tablespoons of milk. Pour in 1 tbsp of melted unsalted butter and mix it all in.
2. Sift in ½ cup of flour. Whisk until all the lumps are gone. Add in ⅛ cup of sugar and whisk until just combined, making sure not to overmix. Sprinkle a generous pinch of salt along with ¼ tsp of vanilla extract.
3. Last but not least, add in a few drops of yellow food coloring to give the pancake the vibrant bright yellow color that we’re looking for.
4. Let the batter chill in the fridge for about 2 hours to allow the starch in the batter to expand.
5. Lightly grease your pan and heat the pan at medium-low.
6. Gently ladle just enough batter to cover the bottom of the pan. Swirl the pan to help the batter distribute evenly. Cook at a low heat with the cap on. Remove from heat once cooked. Repeat the process until batter is gone.
7. Into a large bowl, add ½ cup of heavy cream and 1 tablespoon of powdered sugar. Beat at a high speed until you have whipped cream.
8. Slice the mango pieces into small, bite-sized chunks.
9. Lay down a crepe. Spread a few tablespoons of whipped cream before adding the mango pieces. Then cover the mangos with more whipped cream and wrap the pancake.
