SPANISH OMELETTE with SALSA
Ingredients for Spanish Omelette:
🍳 6 Eggs
🍳 3 Potatoes
🍳 1 Red Onion
🍳 Extra Virgin Olive Oil
🍳 Salt

Ingredients for Salsa:
🍳 2 Tomatoes
🍳 1/2 Cucumber
🍳 1/2 Sweet Corn
🍳 3 cloves Garlic
🍳 1 Green Chili
🍳 1 sprig Coriander
🍳 3 Limes
🍳 Extra Virgin Olive Oil
🍳 Salt
🍳 Black Pepper

Instructions:
1. Heat up a good amount of extra virgin olive oil in a pan.
2. Slice the potatoes and 1 onion into thin slices.
3. Add the onions into the pan to saute for about half a minute, then add in the potato slices.
4. Saute the onions and potatoes for 10 - 15 minutes until caramelised.
5. Slice & dice up the remaining onion, tomatoes, cucumber and garlic, then add them into a bowl. Add your sliced green chili, coriander and corn kernels into the bowl as well.
6. Squeeze in the lime juice, then add extra virgin olive oil, salt and black pepper for taste.
7. Stir all the ingredients together until well combined
8. Crack 6 eggs into a bowl, then mix in the onions and potatoes that have been sauteed. Stir well and season with salt.
9. Cover the bowl with aluminium foil and allow to rest for 10 minutes.
10. Pour the egg mixture into a heated pan with olive oil.
11. Cook the egg on medium heat for 2 minutes, then lower the heat and cook for another 2 minutes.
12. Place a larger plate over the pan to flip the omelette, and put it back into the pan to continue cooking for a few minutes.
13. Remove from pan and serve with salsa!
