The over easy egg is the one I get the most comments on. I will say this, for it to truly be an over easy egg it must be turned over. If not turned over it is not over easy. You can baste the egg with the hot fat to turn the yolk white. You can also add a little water to the pan and cover it. This will turn the yolks white also, but again they were not turned over, so not over easy. But many people call these eggs over easy even though they were never turned over.
