Chicken Curry/Chicken Shorba/chicken salun
Chicken Shorba (curry)
INGREDIENTS
1kg whole chicken cut in pieces
3 medium sized onions cut in slices
1 1/2 medium sized tomatoes halved
1 tsp salt
1 tbsp dried fenugreek leaves
1 tsp crushed coriander
10-12 garlic cloves (or 1 tsp garlic paste)
4 small cubes of ginger (or 1 tsp ginger paste)
1 tbsp cumin powder
2 tbsp curry masala powder
1/2 cup cooking oil/ghee
Fresh coriander
4 green chilli halved
Substitute for curry masala powder
1 tbsp chilli powder
1/2 tsp turmeric powder
1 tsp paprika powder
1/2 tsp garam masala powder
COOKING METHOD
- add oil to the pan on a high flame
- add in onions, garlic and ginger ( if using garlic and ginger paste than do not add at this point)
- mix well together and add in the salt
- fry for a minute on full flame, than add in the tomatoes and cook on a low flame for 20 minutes with lid
- whilst onion and garlic is cooking you can now clean and wash the chicken
- after 20 minutes the onion and garlic should have softened and the tomatoes peels will now be easily removed
- if you are using ginger and garlic paste than this should be added in at this point
- remove the tomato peels and mash up the onion and garlic. You can also use a hand blender to speed up the process
- after a few minutes add in the the chicken and cook for about 5 minutes until chicken turns from pink to white
- add in the dry spices, leaving out the cumin powder which will be added in at a later stage
- cook on high flame and mix all spices well with the chicken
- once everything is mixed in well than add 3 1/2 glasses of water
- when boiling point is reached, cover and cook on medium flame for 20 minutes until your chicken is cooked
- occasionally stir in between and if at any point you feel more water is needed than you may add it
- after 20 minutes your chicken should be cooked nicely, add in the cumin powder, fresh coriander and green chilli (leave a bit for garnishing)
- cover and leave on dham(low flame) for 5 minutes
- your chicken shorba(curry) is now ready to be served with naan. Enjoy!
