🔹 Ingredients:
For the Chicken Marinade:
1 lb (450g) boneless chicken breast or thighs, diced
1 tbsp soy sauce
1 tbsp Mirin
1 tsp cornstarch
For the Sauce:
2 tbsp soy sauce
1 tbsp dark soy sauce (optional, for color)
1 tbsp Mirin
1 tbsp hoisin sauce (optional, adds depth)
1 tbsp sugar
1 tsp sesame oil
1 tbsp cornstarch mixed with 2 tbsp water
1/2 tsp ground ginger
For the Stir Fry:
2–3 tbsp oil (peanut or vegetable)
2 cloves garlic, minced
1/4 cup roasted unsalted peanuts
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2–3 green onions, chopped
🔹 Instructions:
Marinate Chicken:
Mix chicken with soy sauce, wine, and cornstarch. Let sit for 15–20 minutes.
Prepare Sauce:
In a bowl, whisk together all sauce ingredients until smooth.
Stir Fry:
Heat oil in a wok or large skillet over medium-high heat.
Add dried chilies and stir until fragrant (10–15 seconds).
Add chicken and stir-fry until browned and cooked through (5–6 minutes).
Add garlic, ginger, bell peppers, peanuts and green onions. Cook for another 2–3 minutes.
Pour in the sauce. Stir well and cook until thickened (about 1–2 minutes).
Serve:
Serve hot with steamed rice.
