HOW TO MAKE Taiwanese Beef Noodle Soup! (牛肉麵)

One of the most FAMOUS dishes in Taiwan, the SUPER RICH AND TASTY Taiwanese Beef Noodle Soup! When I was in Taiwan, I had just about 20 bowls of beef noodles soup! From classy and expensive bowls at Din Tai Fung, to very affordable ones on the streets of Taipei! Each bowl has its own uniqueness in aromas and flavours.

In my recipe, I kept it super simple but JAM PACKED with flavour! This one is a WINNER!

Recipe:
- 2 tbsp Cooking Oil
- 1 large Onion
- 1 bunch Green Onion
- 8-10 cloves Garlic
- 3 large slices Ginger
- 1 Beef Shank (about 2 lbs)
- 2 sticks Cinnamon
- 3-5 Star Anise
- 1.5 tbsp Tomato Paste
- 1.5 tbsp Doubanjiang (Chinese Chili Bean Paste)
- 1/4 cup Shaoxing Wine
- 1/3 cup Light Soy Sauce
- 1 tbsp Dark Soy Sauce
- 1 tbsp Chinese Black Vinegar
- 2-3 Roma Tomatoes
- 4-5 cups Water
- 1 clump (approx. 1 tbsp) Rock Sugar
- Green Onions for topping
- 1 bunch Flour Noodles
- 1/2 tsp Salt in Boiling Water
- 1/2 bunch Yu Choy
