Strawberry Crumb Cookies

Cookies

½ cup salted butter, softened
½ cup granulated sugar
¼ cup brown sugar
1 egg
2 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
1.2 tsp salt
1½ cups all-purpose flour
1 cup finely diced strawberries

Crumb Topping

½ cup flour
3 tbsp brown sugar
2 tbsp granulated sugar
Pinch of salt
4 tbsp melted butter
Coarse sugar (optional)

Instructions

1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Cream butter and sugars together until light and fluffy. Mix in egg and vanilla.
3. Add baking powder, baking soda, salt, and flour. Mix until just combined.
4. Chop strawberries, then gently fold into the dough.
5. Scoop dough into large balls (about 3 tbsp each) onto baking sheets.
6. Make the crumb topping by mixing flour, sugars, salt, and melted butter until crumbly. Press onto tops of cookie dough balls. Sprinkle with coarse sugar if using.
7. Bake 12–14 minutes, until edges are lightly golden. Let cool before serving.
