Tonight’s dinner: Roasted Lemon Herb Chicken Leg Quarters 🍋🍗

One of my favorite easy dinners because you can marinate the chicken ahead of time, then just dump everything in a skillet and bake. Simple and always so good.

Ingredients
• 2 chicken leg quarters
• Juice of 1 lemon
• 2–3 tbsp olive oil
• 2 tsp rosemary
• 2 tsp thyme
• 2 tsp Italian seasoning
• 1 tsp garlic powder
• 1 tsp onion powder
• Salt + pepper
• 2 white onion, sliced
• Fresh rosemary sprigs

Directions
1. Marinate chicken with lemon juice, olive oil, and seasonings (at least 30 minutes, longer if you have time).
2. Slice the white onion and layer it on the bottom of a cast-iron skillet with a few rosemary sprigs.
3. Place the marinated chicken on top.
4. Bake at 425°F for about 40 minutes until the skin is crispy and the chicken is cooked through.

Served it tonight with a quick tabouli-style salad and it was so good. Simple and perfect for a Monday dinner.
