Syrovarnya (сыроварня ресторан) is a fine-dining experience in Baku in the restaurant from Novikov. It is located in one of the architectural buildings in downtown Baku.
Syrovarnya employs cheesemakers highly skilled in Italian traditional methods, who make cheese both for the restaurant and elsewhere. The menu is based on 'simple food', country-style meals with fresh, high-quality ingredients mainly locally from Azerbaijan. The service is excellent and the drinks menu is rich. It was a pleasure to meet the chef Maxim who personally recommended to us what to pick from the menu, and he was the one who cooked it for our episode.
