Peg's Famous Homemade Noodles - How to Make Them

Peg is my mother-in-law. My husband's Uncle would rave about her noodles for years. So one year, I decided to get the recipe and make it for him. Since then, it's been a tradition to make the noodles and give them as gifts to my husband's family. The ingredients are simple, the process is easy, it just takes a lot of time.

Knowing when the noodles are dry enough to cut is a learning process. If left too dry - they won't go into the pasta machine. Too wet, they make a sticky mess. Reserve some Wondra for putting on the pasta if too wet.

When you dry them in the microwave - you want them to be dry. If not, I would think if not stored properly, it could mold. (I use mine pretty quickly so I can't tell you for sure). There is some moisture after you do the microwave, which is why I don't bag them right away. Be careful not to over-microwave otherwise you will burn your pasta.

To Cook:
