DISCOVERING AMAZONIAN FOOD + sauce made from DEADLY ROOT!
Today I’m discovering Amazonian Food at amaZ restaurant with acclaimed chef Francesca Ferreyros. We’ll be eating many dishes using unique ingredients from the Amazon region in Peru like Paiche, one of the largest freshwater fish in the world. I will also try an ancestral sauce made from a deadly root! It’s called Tucupi Negro and it’s made from the fermented extract of Yuca Brava, a poisonous root. You won’t believe what this sauce tastes like! I was amaZed by the flavour profile.
