Time-lapse Video of Baguette Baking

In this time-lapse footage, you can see what happens as a baguette bakes. Bread dough changes dramatically during the first few minutes in the oven. Its volume increases greatly during this initial period, a phenomenon called oven spring.

When dough first enters the oven, it lies nearly flat on the oven floor. You can see how quickly the baguette expands in the first few minutes of baking. The dough starts to turn golden brown as the crust forms and the scores transform into pronounced “ears” as the baking process continues. The baguette eventually curves upwards; this arching is a sign that is properly baked.
