DISCOVERING OAXACA MÉXICO: LOCAL CHEF & MEZCAL EXPERT SHARE THEIR SECRETS!
What’s the best way to get to know a new place? The people and the food! In this Mexico vlog we take you around Oaxaca to meet a few very talented locals who teach us what they know about some of Mexico’s most famous dishes and mezcal.
Just outside of Oaxaca City we meet Dona Mimi at her restaurant, Maiz. Mimi leads us through an afternoon making some of Oaxaca’s best Mexican food from scratch. Did you know that there are SEVEN types of mole? The mole negro Americans know best is only one of many.
We make mole negro and mole amarillo from scratch with a Oaxacan chef who’s been cooking these classic mexican dishes all her life. Passed down to each generation, these dishes are the heart of Oaxacan cuisine.
Ashley lives out her dream come true learning to make fresh tortillas on the comal, all by hand. With a few misses at first, we get the hang of it and whip out some of the best, most fresh tortillas we have ever had!
We round out our meal with mole chicken tamales, chapulines (fried grasshoppers), and nicuatole (a pre-colonial jelly dessert). You can find the link to this class below and it is one of the best things to do in Oaxaca City by far!
The next day we again get out of Oaxaca city and head for the agave fields to learn from a true mezcal expert all about how this smoky spirit is produced.
The state of Oaxaca produces Mexico’s best mezcal and we take you through the entire process from field to glass. How is mezcal made and why is it so smoky? How do you properly taste mezcal and how is it different from tequila?
