Barley Yogurt Soup / Mint / Parsley/ Soups / Armenian kitchen

Barley Yogurt Soup is one of my favorite soups. I will share the recipe the way how my grandmother used to cook this soup for us.

Barley Yogurt Soup
Ingredients:
7-8 cups of water
1 cup of barley
1 large chopped yellow onion
1/4 cup of olive oil
1-2 tablespoons of butter
1/2 a cup of chopped fresh green onion
2-3 cups of spinach ( if you like you can add spinach )
1/3 cup of chopped fresh parsley
1/3 cup of chopped fresh mint
1/2 a tablespoon of dry mint
2 cups of plain yogurt
1 egg
1/2 fresh squeezed lemon juice

salt and black pepper
