Tractor Oven Meal: Chicken Cordon Bleu Hot Pockets
Now that we're back in the fields, it's time to get those tractor oven meals ready for planting! Since running the bean planter is a little (okay, a lot) more hands on than running the auger cart, I like to stick to things that I can eat with one hand, so I mostly stick to sandwiches and hot pockets. I really like chicken cordon bleu, and one day I realized just how easy it would be to make a handheld version, so here it is!
Chicken Cordon Bleu Hot Pockets:
- 1 can of pizza dough
- diced cooked chicken
- diced deli ham
- 4 slices of baby Swiss cheese
- salt, pepper, & garlic powder to taste
- optional: butter with Italian seasonings & garlic powder to top it off
Preheat oven to 425. Grease baking sheet. Roll out pizza dough and cut into four equal pieces. Tear one piece of cheese into smaller pieces and put half the cheese on the dough. Layer a little bit of chicken and ham on top and sprinkle with salt, pepper, and garlic powder (I forgot to do this part) before putting the rest of the cheese on top. Fold the dough over the filling and roll the edges over pinching with your fingers as you go and then with a fork. Cut a spot in the top of the hot pocket for steam to vent and place on the greased baking sheet. Repeat with the other three. Bake for 15-17 minutes or until golden brown. Optional - brush on melted butter mixed with garlic powder and Italian seasonings (I used fresh chopped parsley and oregano). Enjoy fresh out of the oven or let cool before freezing!
