swiss roll cake

一口就爱上的日式的咖啡焦糖浮云卷,柔软细腻

食材(Ingredients)
牛奶/milk:56g
咖啡粉/espresso powder:8.6g
蜂蜜/honey:33.6g
色拉油/Salad oil:48g
盐/salt:1.4g
面粉/flour:55.2g
玉米粉/corn flour:13.4g
蛋黄/egg yolk:93.6g
蛋白/egg white:168g
砂糖/granulated sugar:50g
【奶油馅/Whipped Cream】
淡奶油/light cream:130g
砂糖/granulated sugar:12g
焦糖酱/caramel syrup:30g
盐/salt:2g

准备工作(PREPARATION)
烤箱提前预热至160°C (320°F)
Preheat the oven to 160°C (320°F).

蛋清和蛋黄分离,将蛋清放入冰箱冷藏
Separate egg white and egg yolk, put the egg white in the refrigerator

制作步骤(Description)

首先把牛奶、橄榄油隔水加热,搅拌均匀
In a double boiler, melt the milk and salad oil

后加入咖啡粉,加热至40度拌均
Add the espresso powder and turn heat to 40 degrees and mix well
倒入过筛的低粉和玉米粉搅拌均匀
add the Low Gluten Flour and corn flour all at once

把蛋黄倒入搅拌好的面糊里,搅拌均匀
Add the yolk and mix well
打发蛋白前,可以提前在蛋清中加入几滴柠檬汁去腥
beat the eggs white and sugar with an electric mixer

分三次加入细砂糖打发
Add the granulated sugar three times separately

由高速转低速打发至湿性发泡。
whip the egg whites to a soft peak
打发好的蛋白,取1/3的蛋白霜加入蛋黄糊中翻拌均匀,
add 1/3 of the meringue to the egg yolk paste and mix evenly.

倒回蛋白霜中翻拌均匀
Pour the mixtures back to meringue and mix well

模具中铺上油纸,倒入蛋糕糊
Pour into mold on a parchment paper lined baking sheet.

抹平表面,震出大气泡
flat layer and Shake out the bubbles

烤箱160度提前预热,
Preheat the oven to 160°C (320°F)

烘烤14分钟
bake for about 14 minutes

转方向继续烘烤15分钟即可
Turn the direction and continue to bake for 15 minutes

制作奶油馅,准备淡奶油,砂糖,焦糖酱和盐
To make the filling, combine the light cream, granulated sugar, caramel syrup and salt in a bowl,

用打蛋器匀速搅拌
and whip with a mixer to stiff peaks, about 5 minutes on medium speed.

铺平蛋糕
Unroll the cooled cake,

涂上奶油馅
then spread the cream all over,

四周留边,以防奶油溢出
leave a 1-inch border around all edges.

轻轻并缓慢的把蛋糕卷起来
Roll the cake up gently

温馨提示(NOTE)
🍃模具用的是28*28的
🍃水浴法加热到有点烫手即可
🍃烘烤完后,可以直接撕去油纸,在蛋糕胚表面盖上烘焙纸,防止表面变干
🍃烤箱温度供大家参考,可以根据自己烤箱脾气适当调节
🍃搅拌蛋白的时候,此部份一定要快,不然会消泡。🍃蛋糕卷打发蛋白不可过硬,打发至湿性打发即可,状态偏软
