Smokey Chicken Shakshuka #brunch #shakshuka #brunchrecipe #eggrecipe

INGREDIENTS - serves 2-4
1 - onion
1 - red bell pepper
1/2 tbsp - oil
4 - turkey or chicken sausages
3 - garlic cloves
2 tsp - smoked paprika
1 tsp - cumin
1/2 tsp - oregano
1/4 tsp - ground coriander
1/4-1/2 tsp - chilli flakes
1/4 tsp - salt
2 tbsp - tomato paste
1 tin/ 400g - Polpa tinned tomatoes
1/2 tsp - honey or sugar
4 - eggs
40g - feta
1 tbsp - freshly chopped parsley
Slices of chilli to garnish and serve!

1. Finely dice the onion and bell pepper. Heat 1/2 tbsp oil in a large shallow casserole pan on a medium heat and add the onion and pepper. Allow these to sweat down.

2. Cut the sausages into bite sized chunks. Push the onion and pepper to one side of the pan and add the sausage to allow both to cook. Once the sausage is cooked, remove it from the pan.

3. Add the finely chopped garlic to the onion and peppers and cook for 1 minute until fragrant before adding the spices and seasoning. Cook these for 1 minute and add the tomato paste. Mix everything together well and allow this to cook for 1-2 minutes until the tomato paste depends on colour.

4. Add the polpa tomatoes, little honey and the salt bring to a gently simmer for 2-3 minutes. After you can take a spatula and press down into the sauce to break up the peppers and onions and work them into the sauce. You can add a splash of water if you feel the sauce is too thick.

5. add the sausage back into the pan and make 4 wells in the sauce. Crack an egg into each well. Cover with the lid and allow the eggs to cook to your liking.

6. To serve, crumble feta, chopped parsley and sliced chillis over the top!
