Chef de cuisine at three Michelin star Restaurante Lasarte Paolo Casagrande on the past seven years since he joined Martín Berasategui at the Barcelona restaurant.

He talks about his formative years, working in kitchens in England and France, namely for trailblazing chef Alain Solivérès, who convinced him to move to Spain, the land of new and avant-garde cuisine, and to work for the man he calls his chef and mentor, Martín Berasategui.
